SWEET POTATO CRUNCH
3 cups mashed sweet potatoes 1/3 cup melted butter 1 tsp. vanilla
TOPPING:1cup brown sugar1cup coconut1cup chopped pecans1/3 cup melted butter1/3 cup flourcasserole. Combine potatoes, vanilla and butter; place in casserole. Combine topping ingredients, sprinkle over potato mixture. Bake covered 20 minutes and uncovered 15 minutes. I usually use just half of the topping mixture over a 9 x 13 Pyrex filled with mashed sweet potatoes. Can be made ahead.
