VEGETARIAN LASAGNA

Ingredients

Lasagna noodles, cooked and drained One jar or more of spaghetti sauce (or make your own)

Instructions

Combine 1-10 oz. pkg. frozen or fresh chopped spinach (cooked and well drained – squeeze with hands) with 1 lb. ricotta or low fat cottage cheese, 1 egg, 1/4 cup grated Parmesan cheese, 1 tsp. salt and 1/4 tsp. pepper. Grate and set aside for layers: 1/2 lb. mozzarella cheese (I use packaged), 1/2 cup Parmesan cheese.In 9 x 13 pan, layer 1/3 of spaghetti sauce in bottom, cover with layer of noodles, 1/2 of the spinach cheese filling, half the mozzarella. Top with remaining sauce and remaining 1/4 cup Parmesan cheese.minutes before cutting. Sometimes I add more of the cheeses and sauce.
