1/2 lb cubed pork tenderloin (leftover is great!) 1/2 cup chopped onion 1 tsp oil 16 oz can of corn 16 oz can of navy beans 16 oz can of chick peas 1/2 cup white rice (uncooked) 4 oz can of green chiles 2 tsp cumin (I use the powder) 1/2 tsp garlic powder 14.5 oz can of chicken broth dash of hot pepper sauce
Saut pork and onion in oil in a large saucepan until lightly browned. Stir in the rest of the ingredients (dont drain cans). BRING to a boil and then lower heat, cover and simmer for about 20 minutes. SERVE with corn bread – great!
