ZUCCHINI PINEAPPLE BREAD
3 eggs 1 cup oil 2 cups sugar 2 tsp vanilla 2 cups shredded zucchini 1 can (8 1/4 oz) drained crushed pineapple 3 cups flour 1 tsp salt 1/4 tsp cinnamon 2 tsp soda 1 cup raisins (may omit) 1 cup chopped walnuts
Beat oil, eggs, sugar and vanilla until thick. Stir in zucchini, pineapple, flour, salt and baking soda, cinnamon, raisins, and nuts. Blend all together – mix well. Pour into 2 well greased and floured loaf pans. Bake 1 hour at 350 degrees.
