Chicken Marsala

  • 1 tablespoon olive oil
  • 1lb boneless, skinless chicken breast (pounded flat)
  • 1/2 cup chopped onion
  • 1 tablespoon chopped garlic
  • 4 ounces fresh sliced mushrooms
  • 3/4 cup dry marsala
  • 1/2 cup heavy whipping cream
  • salt & pepper to taste


In a large hot skillet, add he oil and the chicken.  Saute for three minutes on each side to brown.  Add the next three ingredients, and saute for one minute.  Add the marsala, and simmer for one minute.  Add the cream and season to taste with salt and pepper.  Lower heat to med-high and simmer for 3-5 minutes (or until center is done).
